Steamboat Rock Hike & Dry Falls

So, I’ve been using the Washington Trails Association App called Trailblazer, and have been loving it! You can pull up a map of the area you want to explore and find a hike that interests you. Its been great as we usually have an idea of how far we want to drive based on the time we have. The app gives a great description of the hike as well as how to get there! So when we wanted to go to the Grand Coulee area, we (ahem… Dan) found the Steamboat Rock hike! I thought the hike was called this based on the shape of the rock, but a co-worker told me the wind actually will bellow between the rocks and create a steamboat horn sound, unfortunately we didn’t get to hear this while we were there.

The drive took about 2 hours. We headed West from Spokane on Highway 2 and continued through Reardan and Davenport, then we took the exit at Wilbur and continued to Electric City to the trailhead (directions are easy to find online).

It was a very vertical rocky hike to the top, but the views were worth it!

The views were amazing at the top, there was an insane cliff on every side, you can hardly tell in the photos where the cliff ends and the ground at the bottom begins.

img_2708The geological history of the area is intriguing to say the least. The Ice Age floods thousands of years ago carved out this canyon when a huge ice dam broke. I had to rent the movie on these floods at the library, so interesting to me! Steamboat rock is made of basalt, and there is a huge granite rock at the top. Its crazy to think about the amount of water and how powerful a force there must have been to transport this huge rock here!

Dry Falls

About 20 minutes further on the same road was Dry Falls. Dan had been there and wanted to show me! Although there is no water there flowing over the cliffs, at one point this waterfall was bigger than Niagra Falls. It is about 3 and 1/2 miles long and was once the largest waterfall on earth! Now its a cool view right off the side of the highway with a visitor center and an ice cream shop 🙂

Snowshoeing Rainier! 2018

Dan’s birthday was approaching, and after researching TONS of hot springs with not many left to choose from within a 3-4 hour drive radius that we haven’t been to, Dan suggested Rainier, and I’m all about that life, so we booked it! We decided to take the southern route, stay a night in Yakima, then drive to our destination the next day. The drive through White Pass was gorgeous!

We tried to get in at the Ohanapecosh entrance, but the road to Paradise was closed from there. So we kept around to the entrance at Longmire through the Southwest corner of the park, which was super convenient since our hotel was in Ashford! So glad we got there a day early, because Saturday was a clear sunny day and we got to see Rainier!

The name of the hotel we stayed at was Whittaker’s Bunkhouse, this hotel was adorable and they had a rental shop, thank God, because the park requires chains to be in your vehicle November through May, so we rented them there for $15. Next door to that is Whittaker’s Mountaineering, sort of a mini REI 🙂

This hotel was nothing fancy, our room didn’t even have a t.v. which was actually really nice– there’s nothing worse than staying up all night when you plan a hike at the crack– The cool thing about this hotel is that it is a family run business, started by the Whittaker family. Jim Whittaker was the first American to summit Mt. Everest back in May 1963, and has climbed to the summit of Rainier 80+ times! He and his brother Lou did more climbing excursions than they can probably count, and Jim’s son Leif Whittaker went on to climb Everest twice! The coffee shop at the hotel was not only adorable, but they carry books written by Jim and Leif!

So of course we had to get the books! Well, I miiiigggghhhttt have had to talk Dan into buying the hardbacks over getting the electronic version for his Nuk 😉 I’m kind of old fashioned like that, also, then we can swap 🙂

The next morning we had to wake up super early in order to give us enough time to snowshoe and drive home. Honestly I love mornings though! So we started our journey!

On the drive in we passed Christine Falls! So of course, had to stop and get a pic for my Mom, Christine! It’s hard to see, but there is a little waterfall back in there.

First stop was the Longmire visitor’s center, we wanted to check conditions and ask the ranger’s about the best route for our skill level and time allotment. So we decided to go with the route to Reflection Lake. They had this HUGE Douglas Fir tree that had been cut down back in the early 1900’s, by a local paper company. All the logging in the area was actually kind of sad. Some of the trees we saw reminded me of driving through the sequoia forest! Soooo Big!

This was our planned route, but we ended up taking a little longer route up and around, but the scenery was way worth it! Our hike ended up being about 6 miles!

Once we got to Reflection Lake, we stopped to have lunch. I was hoping for some pic-nic tables or something, but nope! So we just sat on some snow haha I know we weren’t really backpacking or camping overnight, but we did want to test out an MRE, just for future knowledge 😉 And since we LOVE Thailand, we got some Thai food.

The way back was so much harder! It was all uphill! Dan kept telling me “We’re almost there,” but no matter where we were at on the hike, it felt to me like a race spectator telling you “You’re almost there,” when you have already run 12 and you still have a full mile to go! So I told him to stop saying that, in a super sweet way 😉 That was a really tough hike! Hills kill me sometimes! But God, it was so much fun! Sometimes it takes something great to remind you how small you really are in this world ❤

One was legit…  A high school teacher owns it.

And the third one was strange. An elderly lady runs it, who is big into beading and cats… with the smell inside to prove it! I didn’t even get a photo of the $4,500 beaded Mona Lisa, sheesh!

There was a cute restaurant called the Copper Creek Inn where we had dinner. Really good food!

Overall, such a fun trip!!  And, even though we had no luck this time, we will get you your “Yakima Nation” hat next time we’re there babe! haha

San Diego Weekend

So, my BFF called saying she had some buddy passes that were expiring, and if we could use them that following weekend, we could have them! So duh! We decided to go somewhere warm and beautiful, that we could find a gorgeous hike, and San Diego did not disappoint!  So here we go! I love last minute spontaneous trips!


Day 1 we decided to walk around and enjoy some of the city at Balboa Park.

We stopped at the coffee shop which was conveniently named Daniel’s, so of course I made Dan pose for a pic


I thought it was really cool that they’re making a musical based on the movie Benny and Joon, that movie is near and dear to my heart, not only because it was filmed here in Spokane, but because my most favorite Uncle Eddy has a part in it, I miss him so much!


We also walked around the piers and got a photo with the famous kissing statue! Dan’s idea for the pose, he’s such a romantic!


We also checked out the Midway, but on the way there, there was a ship in the harbor literally on fire! It was a little scary!



We decided to go to the Little Italy district for dinner at a restaurant that was recommended to us, Bon Apetit, which was completely random, but turned out to be the same restaurant Shivaughn and I carb loaded at when we did the San Diego Half Marathon in 2010!


Such good food! Ended up getting the swordfish! And we followed that up by a stop at 7-11 for some ice cream to take back to the hotel, along with hiking snacks for tomorrow’s 10 miler!

So, the next morning was an early one. We decided to take the train/ bus ALLLL the way up to Torrey Pines and hike down to La Jolla. Here at the start we passed the Torrey Pines golf course!


Here is the trail head at the start, there was also a rangers station where we should have used some of the sunscreen they had available, ugh lesson learned!


It was almost a maze through cliffs and steep stairs…


But alas…. we made it to the Pacific!


And unbeknownst to us, we discovered Black Beach, a beauty you ask? Ummm not exactly, turns out it’s a nude beach, and there were quite a few naked people running around


The rock formations were by far my fave ❤️

The hike continued down through the UCSD campus, seriously why did I not go to college here out of high school?! It looked like fun if I were 20 again! It was right by the pier.


As we got to mile 7 or 8 ish, there were so many seals at seal rock, and the hiking trails lead right to them, I’ve never been so close! Even the kayakers were boating very close to them!

My Engagement Story ❤

Dan and I had our first date January 31, 2016. And it has been pure bliss ever since. I’ve had a rough patch of dating all the wrong people, but this time was different. We see eye to eye on so many aspects of life, we both have a laid back free spirit type of personality that just meshes so well. He is always thoughtful and goes out of his way to make me feel appreciated, special, and important daily. I have so much respect for him as a father, a friend to Makenna, and a  teacher, the way he impacts his students and mentors them even well after graduation melts my heart. 

So we decided to travel to Thailand together. The first 4 days we were in Bangkok,  interesting city, very busy, and far from romantic! Later Dan told me he was getting nervous because it wasn’t what he’d had in mind.  Then we flew to Phuket. Beautiful white sand beaches, a tropical rainforest. We get to our hotel and the rooms aren’t ready. No biggie, so we decide to enjoy a cocktail while we wait for it. A few other people we were traveling with told me to go to the window and get a photo of my drink with the beach and resort as the background (little did I know they were distracting me) 

Then, out of nowhere, it’s starts pouring down rain. And Dan knows I have always had a fantasy for kissing in the rain, so he asks me “do you want to go kiss on the beach?” And obvi… YES! So we head down, take off our shoes and start kissing, it was beautiful ❤ I tell him, let’s go into the water! So I turn to him reaching out for his hand, and he is down on one knee, he tells me that I’ve made him the happiest boyfriend in the world, and asks me to make him the happiest husband in the world❤YES, so many yesses!!! 

I couldn’t have had a better story. It was perfect, just us all alone on this beautiful beach half way across the world. 

Dan, ever since you have come into my life, I have been nothing but happy. You are my soul mate, and the one who truly understands me, and I understand you ❤

You have made me believe again, in true love, you inspire me to be better. I have loved every one of our adventures, and I can’t wait for many many more! I love you and all of your sweet little girls!

 I can’t wait to spend the rest of my life with you, I can’t wait to be your wife, and a second mommy to all of your girls ❤

St. Paddy’s Five Miler and Some Randoms

This weekend was one of those weekends you know you will look back on and smile about someday 🙂 Lots of family fun! We decided Saturday we would check out the St. Patrick’s Day Parade with all the kids.

Saturday night, I bartended, and another one of my faves stopped by to see me for the St. Paddys party. My bro!

Sunday we set out to run five miles, the weather was beautiful. The race is always at Spokane Community College, so snapped a pic with the mascot.

Trip to Ainsworth Hot Springs and Some Treadmill Running

Recent Workouts

You guys, I ran 2 miles on the treadmill at a 9:13 pace. I know, most of you are thinking, sooooooo??? But for me this is a huge deal! Last year my miles were creeping up to the 11-12 minute mile range. I have started running faster in very very small increments, and am finally up to 2 miles at this pace! Today’s workout: .5 miles at 3.5mph, .5 miles at 4.0mph, 2 miles at 6.5 (9:13 minute miles), and 1 mile at 4.0 mph. I have also been doing spin class at EWU 2x per week, and GRIT class, which is a HIIT (high intensity interval training) 2x per week, which has contributed tons!

Also, recovery is huge, especially when doing weight training. I have been trying to add in a protein shake after most workouts. I love the Orgain Organic Protein you can find at Costco, it’s fairly inexpensive and tastes great! I bring the powder in a shaker bottle with me, then after my workout, I just add water. BOOM!

Also have been trying to squeeze in yoga when I can. I love stretching, it’s my favorite ❤

Ainsworth Hot Springs, Nelson, and Kaslo British Columbia

We set out last Saturday for a trip to B.C. for Dan’s birthday! Since Dan just got his passport, we decided to put it to use and check out Canada! I love road tripping with this guy! You know, you can always tell if a relationship is going to last but how well you travel together!

First stop was Nelson. We were starving and stopped at the first restaurant we found called Finley’s. A cute little bar and grill.

OMG had probably one of the best burgers I’ve had in years. It was called the Wise Cheddar Truffle Cherry Burger. It had pacific rock cheese, cherry jam, truffle aioli, pickled red onion, lettuce tomato and a ciabatta bun. So.Good. Even the side salad was loaded with veggies.

We also did some thrifting and walking around downtown, look how cute their City Hall is (they also had a big modern one next door). They have some awesome hippy shops downtown too!

Next stop was Ainsworth Hot Springs Resort. The drive was gorgeous by the way, after you pass Nelson, you take the road along Kootenai Lake, which is surrounded by the Rockies. Breathtaking. We decided to check in , take a silly picture, and hit the hot springs right away.

The coolest thing about the hot springs here are the caves. It’s a horseshoe shaped cave. Very hot and dark inside but they have a few small lights similar to garden lights that give a romantic ambiance… ooohhh la la… It was too dark, so I stole a couple pictures from the net. I loved it here, but what struck me as odd was that the water was odorless. When we went to Quinn Hot Springs, the water smelled like rotten eggs. Call me weird, but I loved it, it made me feel like there was a very high mineral content and my body was being healed, well not really but you get my drift. You could tell the water felt different at Ainsworth, but it just wasn’t as strong.

Happy Valentine’s Day, Benefits of Bone Broth, and What We’ve Been Up To

Today is one of those holidays I always find cliche, but yet when they come around I’m happy to celebrate! Thank God Dan gets this and came through 😉

Also, gotta show the fam some love. Makenna wanted special heart hair for her valentines party, so here we are.

Anyways, in running news, ITS RUNNING SEASON! Always my first race of the year is the Partners in Pain 5K. I love this race because not only does it get me back in the running spirit, but it reminds me that running is HARD! It’s not something that you just always have (at least for me), but it is something you have to constantly work at, like so many other things in life. And once you let it slide, its harder to get back to where you once were with it ❤

But you just keep doing it…

I’m obsessed with coconut ANYTHING! Hence one of the reasons I think I may have been born into the wrong climate, but anywhoo. So I had to try this yummy coconut antioxidant drink, only 10 calories per bottle. If you love suntan lotion like I do, you will love it 😉

Bone Broth

So, one of the latest food trends is bone broth. I am a self confessed pho addict (which is made of a bone broth base), therefore this is my cup of tea, or um, bone broth haha bad joke!

I’m not gonna lie, this is about double the price of regular chicken or beef stock, but the nutrients definitely make it more valuable than the latter.

Here are a few reasons to try bone broth:

  1. Its good for your bones and joints. It naturally contains glucosamine, chondroiten sulfate for joints and calcium, phosphorus, and magnesium to make those bones strong and help prevent osteoarthritis.
  2. Immune support. Mark Sisson, author of The Primal Blueprint, actually calls bone broth a “superfood” thanks to the high concentration of minerals. School, Snow, Sickness, Ski, Snowshoeing and Spaghetti Squash!

So apparently I love words that start with the letter “S.” I mean my name iiiissss Samantha, so there’s that. Anywhoo, I have lots to share about whats been going on lately, life has been super busy. I’m happy to announce that I am back in school! If you know me, you know that I have my BA in psychology, and if you know psychology, you know that you can’t do much in the field without at least a Masters degree. So here I am, beginning my journey to get my masters in school counseling! I’m taking a few classes at Eastern. It’s been an adjustment, but I’m trying to keep my eye on the prize! I am taking a couple workout classes as well, which I have been loving, EWU has a new rec center that is nothing short of amazing, ice rink and all! I’m taking some group fitness classes as well as just working out in the gym there. It’s very nice!

In other news, Makenna has been taking ski lessons with one of her besties, Londyn. They are the cutest things ever! It amazes me how fast they learn, they went to the top of the mountain on the third lesson! Daredevils!

Guys, I have been so sick the last two weeks, hence why I haven’t been posting much. But this sickness kicked my ass! I know its going around but it got the best of me. Here is a snap of what I’ve been eating

I had such an amazing time, love these girls!

So, I wanted to share with you all how I cook my spaghetti squash. I’ve heard of and tried a lot of ways. I DESPISE cutting the spaghetti squash raw, it’s a workout in itself. It’s basically carving a small pumpkin. For me the easiest way is to take the spaghetti squash and simply stab a couple holes in it ( so it won’t explode/let out the steam).

Next, I bake it at 400 degrees for 45 minutes. You may have to adjust the time depending on the size. Then I carefully remove it, cut it in half the long way, it’s soft now so the knife just slides on through. Open it up  and while holding the half with a hand towel, I scrape out the seeds, this is also easier now as the inside is much softer. Then fork out the “noodles” and enjoy however you like! Easy peasy!

And kinda sorta addicted to these new bacon gruyere egg bites at Starbucks. You guys, they’re amazing. The texture is like nothing you’re ever tasted!

I CAN NOT for the life of me find a copycat recipe. So I did look up the sous vide cooking technique, where you basically cook things in a vacuum sealed plastic baggie at low heat for a long time (6 hours or so). So, I took a stab at it…

First I melted the goat cheese so it was soft and easy to work with

Next I added the eggs and cream and beat until blended

Then put it in a ziplock and cooked slowly for about 45 minutes, who really has the patience for 6 hours 😉

Next I put in cupcake pan, topped with bacon and baked at 350 for about 15 minutes.

Trip to the Canadian Border & Jax Juice

Crystal Falls

Dan, Mojo and I had a weekend sans kids, so we decided to take a quick road trip up to the Canadian border and stop and see some sights along the way.

Until this happened… Not quite sure what he’s doing but he crammed his booty here almost the entire drive… no judgement though Moj, we love ya!

So, Jackie posted some pics of this place and I thought, how beautiful! It’s up past Colville just right off the road. We expected more of a challenge as far as getting to the falls, but it was pretty to hike a bit along the river. You can find directions on how to get there –> here.

Overall, very beautiful and peaceful. I love the sound of natural running water.

We found a random thrift store along the way so thought we would have some pre halloween fun. I’m not gonna lie, I wanted everything in there! Well everything except the “dog bed” that was really just an old couch cushion haha

Ok Ok, back to the trip. Our next stop was the Box Canyon Dam. The view was gorgeous, but I can only imagine how much prettier it would have been without that dam there.

The train tracks were sure pretty though! This is the train ride that goes from Ione to Metaline Falls. 2016 is the last year they are doing this 😦 I logged in to their site as we wanted to get tickets, however, the rides are sold out for the rest of the year. We decided to stop by the train station to see if there was any way to still find tickets and to get to the bottom of why they are closing down. The lady there was very nice and gave us the run down on why. Turns out they would have to have an inspection of the bridges that would cost $130,000. On top of that, they would have to fix whatever came back insufficient on the inspection, this could lead to millions of dollars, which they just don’t have. Jax Juice & Randomness

We checked out Jax Juice on Market and Wellesley, AKA Give It a Shot Espresso. He makes fresh vegetable juices, alkaline water, apple pie, and more! He knows Dan and is trying to get him to be a part of a program he trying to get started.  Buddy Ball, where you team up and play baseball with a child that is disabled. Dan works with kids that have disabilities and personally I think it would be a great fit! When we got there he told us he attended his first City Council meeting and that he brought juice samples for everyone there. He got up to speak, and told everyone there that the juice samples are not why he was there. He was there because  they are putting in a new baseball diamond at Mission Park. He is an advocate for children with disabilities and is hoping for a playground that will accommodate as well. He was there to say thank you <3.

Spokane Half Marathon Recap & Moose Chili

Last Sunday October 9th, I set out to complete the Spokane Half Marathon in honor of a friend from high school, Tasha Buckles. I signed up for the race with Steph and Chana, who were much closer to Tasha than I was, Steph thought we should honor her life and her family by running for her, and we all agreed. I didn’t know this, but she had a thing for tall socks! The Tasha that I know was always positive, outspoken, beautiful and had a passion for her family and friends. You will be greatly missed by many TJB!

Chana is awesome and had some pretty sweet shirts made for us.

The kids had a great time, there were just so many more people here I didn’t get to see much of! That is the only thing that I find hard about these parties, they are a blast but its hard to get everyone together!

Moose Chili

Dan had some moose burger so with fall officially here we decided to whip up some chili! I personally love the copycat Wendy’s chili recipe

If I were to make it again, I would modify it by only using 1/2 the can of tomato sauce. It was a little tomatoey for my taste, I like my chili a little more hearty. But shoot add some cheese and saltines and it toned it down and made it perfect!  I like moose burger even better than beef hamburger! So if anyone has some they want to give me…. 😉
